White Chocolate Eggless Eggnog-12 Days of Christmas Treats


This wasn’t the post that wasn't supposed to go up today, but there are troubles with my kitchen range.  Maybe today is a good time, though, as someone might like to try this for Christmas.

This White Chocolate Eggless Eggnog is good to make if someone is allergic to eggs, you crave eggnog flavor in the middle of July or you just don’t want to pay for the expensive stuff at the store.

One nice about this recipe is that you can make it sugar-free to serve to diabetics.  Just use sugar-free pudding mix and Splenda in place of sugar.  I prefer to use confectioner’s sugar in this recipe as it dissolves easier than granulated.   Adjust the amount of sweetener to suit you taste.

I use 1 percent milk for drinking so that is what I use,  but I like to add 1 cup of heavy cream to the mix.  This keeps several days so can be made ahead for parties.


White Chocolate Eggless Eggnog

1 (3 oz.) pkg. White Chocolate Instant Pudding, regular or sugar-free
1/4 c. confectioner’s sugar or Splenda
6 cups milk, divided
2 t. vanilla
1/2 t. nutmeg
1 t. rum flavored extract (opt.)
1 c. heavy cream

In a large bowl combine pudding mix and confectioner’s sugar.  Whisk together.  Add 2 c. milk whisking until blended and smooth.  Add vanilla, nutmeg and rum extract.  Whisk well.  Add remaining milk and heavy cream stirring until well blended.  Pour into covered container and chill to allow flavors to blend.  Makes 7 cups.

Cinnamon Almond Squares-Improv Challenge

The ingredients for the May Improv Challenge, hosted by Kristen over at Frugal Antics of a Harried Homemaker, is cinnamon and sugar.

This is a pretty common combination so it wasn’t difficult for me to chose a recipe to share today.  Of course, it is a cookie.  Of course, it is a bar cookie.  Of course, it comes from one of my favorite cookie books, my old reliable “Homemade Cookies” from Farm Journal.

This is a shortbread type cookie that takes only six ingredients and is very quick and easy to put together.  The dough is most easily made with an electric mixer as there is only an egg yolk binding all the ingredients together.  To facilitate it blending in, it is best to remove the egg from the refrigerator, separate the yolk and the white and let them sit for 10 to 15 minutes.

The cookies can be easily varied by using different spice and nut combinations.  My favorite spice is actually 5-Spice, but nutmeg, cardamom or ginger are all good.   Use any nut that you like or have on hand.

Walnut Cinnamon Squares

2 c. flour
1 c. sugar
1 t. cinnamon
1 c. butter, softened
1 egg, separated
1 c. toasted slivered almonds

Place flour, sugar and cinnamon in the bowl of an electric mixer.  Add butter and mix until mixture is well blended and crumbly.  Add egg yolk and mix until mixture is well blended and sticks together.  Turn mixture into the center of a lightly greased 10x15-inch jelly roll pan.  Pat dough out evenly to cover the bottom of the pan.  Beat egg white until it is foamy.  Using a pastry brush, spread egg white over the top of the dough.  Sprinkle the slivered almonds over the top.  Press them in lightly with the palm of your hand.  Bake at 275 degrees 1 hour.  While still hot, cut in 1 1/2-inch squares.  Cool in pan on rack.  Makes about 4 doz.

Improv Challenge-Banana Nutmeg Squares


This ingredients for January Improv Challenge hosted by Kristen from Frugal Antics of a Harried Homemaker are bananas and nutmeg.

It seems I always buy one or two bananas more than I can eat so they end up in the freezer waiting to be made into something.  This month I was aiming for a bar cookie, and the squares could be cut small and served that way; but the recipe really produced a cross between a cake and a coffeecake so serve it as you wish.

I used a stresuel topping, but stirred the batter to swirl it into the dough.  I thought some of the topping would stay on the top, but it all sank into the batter.  That left me needing to do something with the top so I used a little powdered sugar glaze to finish the recipe off.

Banana Nutmeg Squares
1/2 c. butter, softened
1 1/2 c. sugar
2 eggs, at room temperature
1 c. sour cream, low fat is OK
1 t. vanilla
1 c. mashed bananas, about 3 small
2 c. flour
1 t. baking soda
1 t. salt
1/2 t. nutmeg
1/2 c. chopped, toasted walnuts
1/3 c. flour
1/3 c. brown sugar
1/2 t. nutmeg
1/4 c. butter
1/2 c. powdered sugar, sifted or put through a sieve
4 t. milk
sprinkle of nutmeg

Cream butter and sugar together until well blended.  Stir in eggs, sour cream, vanilla and bananas.  Stir with wire whisk until well blended.   Mix together flour, baking soda, salt and nutmeg.  Stir into banana mixture, mixing well.  Add walnuts.  Spread into greased and floured 9x13-inch baking pan.  Combine flour, brown sugar and nutmeg in a small bowl.  Cut in butter until mixture resembles coarse corn meal.  Sprinkle mixture over batter in pan.  Swirl a knife back and forth from side to side and end to end to swirl topping into batter.  Bake at 350 degrees about 30 minutes until a toothpick inserted into cake comes out clean.  Remove from oven.  Combine sifted powdered sugar, milk and a sprinkle of nutmeg until well blended.  Drizzle and spread glaze over top of cake.  This can be done either when the cake is warm if serving as a coffeecake or when cool if served as a cake.  Makes 15 servings.
